Over the past months I’ve been travelling and working around Argentina, Peru and now I’m on San Francisco ready to spot trends from US market and Expo West Food Show

I’ve read dozens of “2026 food & health trend predictions”.
Most of them look polished. Optimistic. Easy to digest.

And yet, they all feel strangely disconnected.

Disconnected from the real problems people are already living with, and will be living with even more intensity in the coming years like:

Rushed lifestyles, Ultra-processed diets, Chronic stress, Environmental toxics exposure.These are no longer abstract risks. They’re showing up in bodies, biomarkers and healthcare systems.

As a nutritionist working closely with food innovation, I’ve noticed a shift.

2026 won’t be shaped just by new flavors,formats or ingredients.
It will be shaped by the consequences of how we’ve been eating, living and working for decades.

Today newsletter is not a trend list. It’s about cause and effect & new silent health problems that consumers are facing and we need to put as priority:

– Low Grade Inflammation (Inflamaging)
– Hormonal disruptions
– Toxic load
– Gut health & gut barrier dysfunction
– Metabolic instability

1️⃣ Inflammaging or age-related inflammation

The common denominator of modern illness

In today's fast-paced world, low-grade chronic inflammation isn't just an individual issue, it's a societal one. Industrialized lifestyles, with their emphasis on processed foods, sedentary habits, and high stress, have fueled a rise in "inflammaging," or age-related inflammation.

One of the most accessible ways to combat chronic inflammation and go to a healthy ageing future is through diet. An ultraprocessed free and anti-inflammatory eating pattern emphasizes whole, nutrient-dense foods that reduce inflammatory markers.

Diet alone isn't enough—lifestyle habits form a holistic approach to dialing down inflammation.

– Ancestral carbohydrates (potato, sweet potato, cassava, buckwheat) replacing refined bases
– Real protein sources (Meat, Tofu, Tempeh, Fish, Egg, Whole Dairy)
– Fibre and protein-forward breakfasts and snacks for glucose stability
– Replacement of inflammatory seeds oils for olive oil & stable cooking fats
– Gut barrier repair positioning (collagen, Bone broths, Glycine)
– Oxidative stress support (antioxidants, omega-3, glutathione systems). – Low and No alcohol innovations for social and special occasions based on ferments, tea or botanicals.

3️⃣ Detox 2.0: Microplastics & Heavy Metals

The invisible accumulation we can no longer ignore

Microplastics and heavy metals are no longer an environmental issue.
They are a human biology issue.

We now know that microplastics have been detected in:

  • Blood & Lungs

  • Placenta, Sperma & Breast milk

  • Brain tissue

At the same time, chronic exposure to heavy metals such as lead, mercury, cadmium and arsenic continues through food, water, packaging, cookware and even supplements 🤯
